Resting: Once done, remove the beef from the smoker and let it rest for about 30 minutes. This allows the juices to redistribute throughout the meat, making it more tender and flavorful. Roasted Vegetables Preparation: Select your preferred vegetables. Root vegetables like carrots, potatoes, and parsnips work well, as do zucchini, bell peppers, onions, or brussels sprouts. Cut the vegetables into uniform-sized pieces to ensure even roasting. Seasoning: Toss the vegetables in a mixture of olive oil, salt, and pepper. You can also add herbs and spices, such as rosemary, thyme, or garlic powder, for extra flavor. Roasting: Preheat your oven to 425°F (220°C). Spread the vegetables out on a baking sheet, making sure not to overcrowd them. Roast in the oven for 20-30 minutes, or until they're tender and have a nice golden brown color. Stir or flip the vegetables halfway through to ensure even roasting.
